Getting lots of raw veggies into your diet provides insoluble fiber for gut health and countless phytonutrients that help fight disease and satisfy true hunger.

But sometimes salad can get boring. The same old veggies. The same dressing.

That’s when it’s time to change it up a bit. Try a new flavor profile, or a new dressing, like the Spicy Mango Dressing on this Hawaiian inspired salad.

It’s cold, crunchy, mangoey (is that a word?) and a tad bit spicy.

Hawaiian Salad with Spicy Mango Dressing

Serves 2

Salad Ingredients 

4-6 cups mixed salad greens
1 cup shredded red cabbage
1/2 red, yellow or orange bell pepper, sliced into strips
1/2 English cucumber, sliced
2/3 can chickpeas, drained and rinsed
1/2 cup macadamia nuts
1/2 cup cooked quinoa or brown rice
1/4 cup unsweetened coconut flakes

Dressing Ingredients

2 Tbsp. diced ripe mango
1 Tbsp. coconut vinegar or rice vinegar
1 tsp. sambal oelek (chili garlic paste or sriracha)
1 Tbsp. water
pinch of salt (optional)

Directions

Place the dressing ingredients in a small food processor and blend until combined, set aside.

Divide the salad ingredients between two plates. Drizzle on the dressing and sprinkle on the shredded coconut.
